Position Description
Food Service/Cook Supervisor III works under the direct supervision of the Food Service Manager and consult with them on a regular basis. This position requires the employee to work and supervise directly with inmates. They will supervise the serving of meals, schedule, assign, coordinate and review work of inmate staff, train staff/inmates on agency policies and procedures, food preparation/service, along with health and safety regulations, train food service personnel in operation of kitchen equipment.
They will be responsible for ensuring food quality along with portion control, prepare special dietary meals, prepare food delivery carts to transport prepared meals, ensure proper rotation of food and supply inventories, and minimize food wastage by ensuring proper food preparation and utilization of leftovers. Maintain a clean and sanitary kitchen environment, direct staff in cleaning activities and comply with health codes and sanitation requirements. Observe safe practices at all times, adhere to tool/equipment control administrative regulations and institutional procedures. Ensure safety training is ongoing.
Maintain and project an approachable, open-minded attitude, and respect appropriate confidentiality to ensure open, two way communication.
Prison kitchens are staffed 24 hours a day. Shifts are 10 hour with three days off per week.

Minimum Qualifications
"Graduation from high school or equivalent education and four years of experience which involved planning, preparation and serving of regular and special meals; following established menus; ordering food supplies; and maintaining records in an military, institutional, correctional, healthcare, hospitality, or other large quantity food service facility. One year of the required experience must have been in a supervisory capacity; OR one year of experience as an Food Service Cook/Supervisor II in Nevada State service; OR an equivalent combination of education and experience as described above."
